Cuisine-Peruvian Fusion

Gagit was really not intersted in going to the Buenos Aires outpost of this well known Peruvian star chef after a medicore experience in Santiago,Chile, however, after a strong recommendation by his friend Martin at Cavas made the trip. This is a lunch review over business with Gaby Gaby.We are led to our upstairs table today and greeted by aspiring actress server Marta see above for a welcoming smile. We order glasses of my favorite Argentinian Blanco wine Alta Vista Torrontes 2007 as we study the menu.

We start of course with the Peruvian seafood specialities: Ceviche Mixto.fresh fish, squid. octopus, prawns,with juliene onions. roasted dry corn,sweet potato,macerated with lime juice and Peruvian chilis, see above for the dish that looks spectacular but tastes even better and Covina Tiridito ,also shown in the same lime and chili sauce , both wow dishes.

Time to order the mains from the delectable and extensive menu that makes it hard to decide. We choose the first dish Papas Rellenos ,stuffed potato with roasted pepper inside and two authentic sauces to enhance the delicate flavor of the dish,see picture of course. The second dish we choose a speciality crema papas with fresh seafood including delicious grilled squid and topped with fresh herbs, as shown. I am ready to try more of the luscious seafood specialities for my experience in Chile taught me to stay with the seafood and a review I have read about the Panamanian location suggests the same. However, it is lunchtime and we need to move on to dessert.

Here , I am blown away especially since I rarely eat dessert. The dessert trio of house specialities are served and also shown .The trio consists of a portion of Arroz pudding ,delicately flavored, a sweet potato begnietes with accompanying sauce, and the third,a dulce de leche delight that Gaby called the Spirit of Lima, and as I ate it I thought of my last visit to Lima and  a great meal overlooking the Pacific and tasting its seafood delights. This is the first dessert  to be admited to the Gagit Hall of Fame.

Let the Truth be Told, after my Chilean experience of Agurio’s cuisine, I was not really looking foward to this Buenos Aires experience but I admit I am glad I went and found the genuis of Peruvian Cuisine. I still have my  doubts on his meat dishes  but when it comes to  Peruvian seafood ,I cannot imagine anyone any more creative or masterful . I look foward to try his  La Mar restaurant in Sao Paulo and experience the Susprieso of  Lima  once again.
