Cuisine-Head to Tail

Last year on his way to Basel, Gagit stopped off in London and dined at Hereford Road, a Head to Tail restaurant by  a Fergus Henderson disciple and was dissapointed,this year the real thing. The picture of the restaurant shown above,shows that this place looks like it should specialize in this cuisine. I walk in , on this semi crowded atmosphere and get a table for one, after waiting 10 minutes enjoying the house bitter.

I am seated at a spacious table and introduced to my server, Liam,shown above.appropriate name and a true prossional who enjoys  his position here and it  shows by his service.I start out with the starter I was told is a must have, Roasted Bone Marrow with parsley. It is shown in all its splendor above, served with the tasty salt, greens, and special toast to enjoy its every taste.This is  a Gagit Hall of Fame inductee for sure for the flavor and taste surpassed all my expectations. Another bitter and the next course arrives.

Here i stretched my tastebuds and ordered the Chitterlings and Radish, again shown above,I must honestly say that these pig intestines did not create a  taste sensation that I had hope for and were way to bland to consider to order again but I did eat every bite. Another bitter and my last dish arrives, the house Welch Rarebit and wow what a taste explosion . Liam explains that the sharp Cheddar is mixed with Guiness and Mustard and it is exploded in my mouth with every mouthful. I ate every bite of this monster portion as shown , knowing full welll this is my dessert.

I would have loved to try the house dessert of Ecles Cake & Lancashire Cheese or the famous Madelines but the Rarebit was too filling, leaving me a real reason to come back next year for more of Fergus’s head to tail specialities.

Let the Truth be Told, if you are brave enough to eat this food then  there is only one place to go ,probably in the whole world, let alone London, and that is St.. John.I would love to go with a group and try it all including the suckling Pig, but unlike most restaurants you can eat here alone and have a feast.
